Ingredients
- Whole Red Snapper
- Garlic Powder
- Lemon Pepper Seasoning
- Yellow Mustard
- Cajun Seasoning
- Fish Fry Batter
- 1/3 Corn Meal
- 1/4 Flour
- 1/2 Tsp Garlic Powder
- 2 Tsp Cajun Seasoning
- 1 Tsp Lemon Pepper Seasoning
Instructions
- Clean & Dry: Rinse the red snapper with cold water and pat it completely dry inside and out using paper towels
- Score (For whole fish): Cut 3 to 4 diagonal slits on both sides of the fish. This helps the seasoning penetrate and allows the fish to cook evenly
- Season: Rub the fish with yellow mustard, then sprinkle Garlic Powder, Cajun Seasoning, and Lemon Pepper Seasoning. Ensure the seasoning is rubbed into the slits and the inner cavity
- Coat: In a shallow dish, mix 1/3 Cup Corn Meal, 1/4 Cup Flour, 2 Tsp Cajun Seasoning, 1 Tsp Lemon Pepper Seasoning, 1/2 Tsp Garlic Powder. Lightly dredge the fish in the mixture, shaking off any excess
- Heat the Oil: In a large, heavy skillet (such as cast iron), heat about 1 inch of cooking oil to 350°F
- Fry: Carefully lower the seasoned, coated fish into the hot oil
- Fry for 4 to 6 minutes on the first side, then carefully flip using tongs and cook for another 4 to 5 minutes until golden brown.
- Drain & Serve: Remove the fish and let it drain on a wire rack set over paper towels to keep it crispy.
