Ingredients

  • Whole Red Snapper
  • Garlic Powder
  • Lemon Pepper Seasoning
  • Yellow Mustard
  • Cajun Seasoning
  • Fish Fry Batter
  • 1/3 Corn Meal
  • 1/4 Flour
  • 1/2 Tsp Garlic Powder
  • 2 Tsp Cajun Seasoning
  • 1 Tsp Lemon Pepper Seasoning

Instructions

  1. Clean & Dry: Rinse the red snapper with cold water and pat it completely dry inside and out using paper towels
  2. Score (For whole fish): Cut 3 to 4 diagonal slits on both sides of the fish. This helps the seasoning penetrate and allows the fish to cook evenly
  3. Season: Rub the fish with yellow mustard, then sprinkle Garlic Powder, Cajun Seasoning,  and Lemon Pepper Seasoning. Ensure the seasoning is rubbed into the slits and the inner cavity
  4. Coat: In a shallow dish, mix 1/3 Cup Corn Meal, 1/4 Cup Flour, 2 Tsp Cajun Seasoning, 1 Tsp Lemon Pepper Seasoning, 1/2 Tsp Garlic Powder. Lightly dredge the fish in the mixture, shaking off any excess
  5. Heat the Oil: In a large, heavy skillet (such as cast iron), heat about 1 inch of cooking oil to 350°F
  6. Fry: Carefully lower the seasoned, coated fish into the hot oil
  7. Fry for 4 to 6 minutes on the first side, then carefully flip using tongs and cook for another 4 to 5 minutes until golden brown.
  8. Drain & Serve: Remove the fish and let it drain on a wire rack set over paper towels to keep it crispy.
